A delightful dessert that combines the indulgent creaminess of coconut with the vibrant zest of oranges.
Ingredients
Scale:
1 cup of coconut cream
½ cup of granulated sugar
1 teaspoon of vanilla extract
1 tablespoon of shredded coconut (toasted if desired)
1 cup of freshly squeezed orange juice
½ cup of granulated sugar
2 teaspoons of gelatin (or agar-agar for a vegetarian option)
Zest of 1 orange
Fresh orange slices (for garnish)
Mint leaves (for garnish)
Extra toasted shredded coconut (for garnish)
Instructions
In a mixing bowl, combine the coconut cream, granulated sugar, and vanilla extract. Whisk until smooth and sugar is dissolved. Gently fold in the toasted shredded coconut.
Spoon the coconut mixture into a serving dish or individual cups, spreading evenly. Place in the refrigerator for at least 30 minutes to set.
In a small saucepan, heat the freshly squeezed orange juice and sugar over medium heat until the sugar dissolves completely, stirring continuously. Remove from heat and allow to cool slightly.
In a small bowl, sprinkle gelatin over 2 tablespoons of cold water and let it sit for about 5 minutes to bloom. Once bloomed, stir it into the warm orange juice mixture until fully dissolved.
Stir in the orange zest and allow the mixture to cool slightly before pouring.
Carefully pour the orange mixture over the set coconut layer. Return to the refrigerator for an additional 1-2 hours, or until fully set.
Once the Coconut Orange Glow is set, garnish with fresh orange slices, mint leaves, and a sprinkle of toasted shredded coconut before serving.
