2 cups water or vegetable broth

2 tablespoons freshly squeezed lime juice
1 tablespoon olive oil

Instructions
Rinse the rice under cold water until the water runs clear.
In a medium saucepan, add the rinsed rice, water or vegetable broth, and salt. Bring to a boil over medium-high heat.
Once boiling, reduce the heat to low, cover the saucepan with a lid, and let it simmer for about 18-20 minutes.
