8 ounces fresh chorizo, casings removed
4 large flour tortillas (or corn tortillas for a gluten-free option)
2 cups shredded cheese (Monterey Jack, Cheddar, or a Mexican blend)
1 cup diced tomatoes (optional)
1/2 cup sour cream (optional)
1/4 cup chopped fresh cilantro (optional)
1/2 cup sliced jalapeños (optional)
Instructions
Heat the olive oil in a skillet over medium heat. Add the fresh chorizo to the pan, breaking it apart with a spatula. Cook for about 5-7 minutes or until the chorizo is well browned and cooked through.
While the chorizo cooks, prepare your tortillas. You can use flour or corn tortillas based on your preference. Consider warming the tortillas for a few seconds on each side in a dry skillet.
Once the chorizo is ready, reduce the heat to low. Place one tortilla in the skillet and sprinkle half of the shredded cheese evenly over it. Add half of the cooked chorizo on top of the cheese, then sprinkle with more cheese. Finally, top with a second tortilla.
Increase the heat to medium again, and cook for about 3-4 minutes or until the bottom tortilla is golden brown and crisp. Carefully flip the quesadilla and cook the other side for an additional 3-4 minutes.
Once cooked, remove the quesadilla from the skillet and let it cool for a minute. Cut into wedges and serve with your choice of toppings.
