Description
Chocolate Chip Shortbread Cookies are a delightful twist on the classic shortbread cookie. The buttery, crumbly texture combined with rich chocolate chips creates a melt-in-your-mouth experience that is perfect for any occasion.
Ingredients
Scale:
2 cups all-purpose flour
1/2 cup powdered sugar
1/4 teaspoon salt
1 cup unsalted butter, softened
1 teaspoon pure vanilla extract
1 cup semi-sweet chocolate chips
Instructions
Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper for easy cookie removal and to prevent sticking.
In a mixing bowl, whisk together the flour, powdered sugar, and salt until well combined.
In a separate bowl, cream the softened butter until light and fluffy, about 2-3 minutes.
Add the vanilla extract to the butter and mix until incorporated.
Gradually add the dry ingredients to the butter mixture, mixing until just combined.
Fold in the chocolate chips gently.
Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake in the preheated oven for 15-20 minutes, or until the edges are lightly golden.
Remove the baking sheet from the oven and let the cookies cool on the sheet for 5 minutes before transferring them to a wire rack to cool completely.
