Chicken Marbella is a classic Mediterranean dish that wonderfully blends sweet and savory flavors, making it a standout in any chicken recipe collection.

4 pounds boneless chicken thighs, trimmed of excess fat
1 cup pitted prunes, halved
1 cup green olives, pitted and halved, preferably Kalamata
1/2 cup capers, rinsed
1/2 cup extra virgin olive oil
1/4 cup red wine vinegar
1/4 cup brown sugar
1 tablespoon dried oregano
6 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
Fresh parsley, chopped (for garnish)
Additional olives for garnish (optional)
Instructions
In a large mixing bowl, combine the boneless chicken thighs, prunes, green olives, capers, olive oil, red wine vinegar, brown sugar, oregano, minced garlic, salt, and black pepper. Ensure all the chicken pieces are thoroughly coated with the marinade.
Cover the bowl with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
Preheat your oven to 350°F (175°C).
Transfer the marinated chicken and the marinade into a large baking dish. Spread the chicken pieces evenly.
Bake in the preheated oven for 45-55 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
For added flavor, baste the chicken with the pan juices halfway through the cooking time.
Once done, remove from the oven and let it rest for about 5-10 minutes before serving.
Garnish with chopped parsley and additional olives if desired before serving.
