This recipe combines tender chicken breasts with a creamy, cheesy spinach and mushroom sauce, topped with bubbling cheese that will have everyone clamoring for seconds.
Ingredients
Scale:
4 boneless, skinless chicken breasts, approximately 6 ounces each
2 cups fresh spinach, chopped, ideally organic for better flavor
1 cup mushrooms, sliced, preferably cremini or button mushrooms for a milder taste
1 cup cream cheese, softened to room temperature for easier mixing
1 cup shredded mozzarella cheese, freshly shredded yields the best melt
1 cup grated Parmesan cheese, aged for a richer flavor
2 cloves garlic, minced, which enhances the aroma and flavor
1 teaspoon garlic powder, for an extra garlicky kick
Salt and pepper to taste, freshly cracked pepper adds a nice bite
2 tablespoons olive oil, extra virgin for the best flavor
1/2 cup breadcrumbs (gluten-free if needed), panko breadcrumbs provide extra crunch
1 tablespoon butter, melted, which helps the breadcrumbs brown beautifully
1 tablespoon fresh parsley, chopped (for garnish), adds a pop of color and freshness
Instructions
Preheat your oven to 375°F (190°C) to ensure even cooking throughout the dish.
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
Add the sliced mushrooms and cook for 5-7 minutes, stirring occasionally, until they are soft and golden brown.
Stir in the chopped spinach and cook for another 2-3 minutes until wilted. Remove from heat and let it cool slightly.
In a mixing bowl, combine the cream cheese, half of the mozzarella, half of the Parmesan, onion powder, garlic powder, salt, and pepper. Mix until smooth.
Add the sautéed spinach and mushrooms to the cream cheese mixture, stirring until well combined.
In a baking dish, place the chicken breasts and season with salt and pepper. Spoon the creamy spinach and mushroom mixture evenly over each chicken breast.
Sprinkle the remaining mozzarella and Parmesan cheese on top of the chicken and filling.
In a small bowl, combine the breadcrumbs with melted butter and mix until coated. Sprinkle the breadcrumb mixture over the top.
Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the cheese is bubbly and golden brown.
Remove from the oven and let it rest for a few minutes. Garnish with fresh parsley before serving.
