These delightful rolls are the perfect combination of soft, fluffy dough and flavorful cheese filling, making them an irresistible snack or appetizer for any occasion.

3 ½ cups all-purpose flour
1 packet (2 ¼ tsp) instant yeast
1 tsp salt
¼ cup sugar
1 cup warm milk (110°F or 43°C)
¼ cup unsalted butter, melted
2 large eggs
2 cups shredded mozzarella cheese
½ cup grated Parmesan cheese
1 tsp garlic powder
1 tsp Italian seasoning
Salt and pepper to taste
2 tbsp unsalted butter, melted
1 tbsp fresh parsley, chopped (optional)
Instructions
In a large mixing bowl, combine the warm milk, sugar, and yeast. Allow it to sit for about 5-10 minutes until it becomes frothy, indicating that the yeast is activated and ready to work its magic.
Add in the melted butter and eggs, mixing until combined and smooth. The melted butter adds richness while the eggs provide structure to the rolls.
Gradually add in the flour and salt, stirring until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until it is smooth and elastic, which is essential for that soft, pull-apart texture.
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
While the dough is rising, prepare the cheese filling by combining the mozzarella, Parmesan, garlic powder, Italian seasoning, salt, and pepper in a bowl. Mix well and set aside.
Once the dough has risen, punch it down and roll it out on a floured surface into a rectangle, about ½ inch thick.
Cut the dough into squares, approximately 2x2 inches. Place a generous spoonful of the cheese filling in the center of each square.
Fold the corners of the dough over the cheese, pinching to seal the filling securely. Arrange the filled dough balls in a greased bundt pan or a round baking dish.
Cover the pan with a cloth and let the rolls rise for another 30-45 minutes until puffy.
Preheat the oven to 350°F (175°C). Bake the rolls for 25-30 minutes, or until they are golden brown on top.
Remove from the oven and brush the tops with melted butter. Sprinkle with fresh parsley if desired.
