This Burrata Peach Salad combines the creamy indulgence of burrata cheese with the juicy sweetness of fresh peaches, creating a perfect balance of flavors that embodies the essence of summer.
Ingredients
Scale:
4 cups arugula, washed and dried
2 ripe peaches, sliced
8 ounces creamy burrata cheese, at room temperature
1/4 cup toasted walnuts, roughly chopped
2 tablespoons fresh basil, torn
1/4 cup extra-virgin olive oil
2 tablespoons apple cider vinegar
2 tablespoons honey
1 teaspoon red pepper flakes (adjust to taste)
Salt and freshly ground black pepper, to taste
Instructions
Begin by making the hot honey vinaigrette. In a small saucepan over medium heat, combine the olive oil, apple cider vinegar, honey, and red pepper flakes. Stir gently until warmed through, about 2-3 minutes, ensuring the ingredients are well blended but not boiling. Remove from heat and season with salt and pepper. Let it cool slightly.
While the vinaigrette cools, prepare the salad. In a large serving bowl, layer the arugula as your base.
Arrange the sliced peaches over the arugula.
Gently tear the burrata cheese into pieces and place it atop the salad.
Sprinkle the toasted walnuts and torn basil over the salad.
Drizzle the warm hot honey vinaigrette generously over the salad just before serving. Toss lightly to combine.
Serve immediately for the best texture and flavor.
