This dish brings the essence of a traditional burger into a vibrant, hearty bowl, perfect for those who want to enjoy the flavors of a burger while keeping things healthy.
Ingredients
Scale:
1 pound ground beef (or grill chicken for a grilled chicken bowl)
2 cups cooked quinoa (or brown rice)
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1 cup mixed greens (spinach, arugula, etc.)
1 avocado, sliced
3 tablespoons olive oil
2 tablespoons balsamic vinegar
Salt and pepper, to taste
1/2 cup shredded cheese (optional)
1/4 cup sliced pickles
Fresh herbs (such as parsley or cilantro)
Spicy burger toppings (like jalapeños or sriracha), if desired
Instructions
In a large skillet over medium-high heat, add the ground beef. Cook until browned, about 6-8 minutes, breaking it apart with a spatula until no pink remains.
Season with salt and pepper. You can add garlic powder or onion powder for extra flavor.
If not done already, cook quinoa according to package instructions, usually for about 15 minutes.
In a large bowl, layer cooked quinoa as the base. Top with the seasoned ground beef and arrange the vegetables around the beef.
Gently place sliced avocado on top.
In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper. Drizzle over the assembled bowl.
Finish off your burger bowl with shredded cheese, pickles, fresh herbs, and any spicy toppings you like.
