8 ounces elbow macaroni or any shape you prefer
2 cups fresh or frozen broccoli florets
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 cups whole milk or a milk alternative for gluten-free options
2 cups shredded sharp cheddar cheese
1 teaspoon Dijon mustard (optional)
1/2 teaspoon salt, or to taste
1/4 teaspoon pepper, or to taste
1/2 cup breadcrumbs (optional for added crunch)
Instructions
In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
In the same pot, add the broccoli florets to the boiling pasta water for the last 2-3 minutes of cooking. Drain both the pasta and broccoli together and set aside.
In the pot, melt the butter over medium heat. Whisk in the flour, cooking it for about 1 minute until slightly golden.
Gradually pour in the milk while whisking continuously. Cook for about 5-7 minutes until the mixture thickens.
Remove the pot from heat and stir in the cheddar cheese until melted and smooth. Add the Dijon mustard, salt, and pepper.
Stir the cooked pasta and broccoli into the cheese sauce until well-coated.
Optional: Preheat your oven to 350°F (175°C). Transfer the mixture to a greased baking dish, sprinkle breadcrumbs on top, and bake for 20-25 minutes.
