Ingredients
Scale:
4 cups fresh blueberries
3/4 cup granulated sugar
2 tablespoons cornstarch
1 tablespoon lemon juice
1 teaspoon vanilla extract
1/4 teaspoon salt
1 1/2 cups all-purpose flour
1/2 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, melted
1/2 cup milk
1 teaspoon vanilla extract
Instructions
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine the fresh blueberries, 3/4 cup sugar, cornstarch, lemon juice, vanilla extract, and salt. Gently toss the ingredients together until the blueberries are well-coated. Pour this mixture into a greased 9x13 inch baking dish.
In another bowl, whisk together the flour, 1/2 cup sugar, baking powder, and salt for the cobbler topping.
Pour in the melted butter, milk, and vanilla extract into the dry ingredients. Stir until just combined; do not overmix.
Drop spoonfuls of the cobbler topping evenly over the blueberry filling.
Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the blueberries are bubbling around the edges.
Once baked, remove the cobbler from the oven and let it cool slightly before serving.
