Ingredients

1 lb cod fillets
1 tsp chili powder
1 tsp cumin
1 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
2 tbsp olive oil
2 cups shredded cabbage
1 cup corn (fresh, frozen, or canned)
1/2 cup diced red bell pepper
1/4 cup chopped cilantro
2 tbsp lime juice
1 tbsp honey or agave syrup
Salt and pepper to taste
1/2 cup sour cream or Greek yogurt
1/4 cup mayonnaise
1 tbsp lime juice
1 tsp hot sauce (optional)
Salt to taste
8 small corn tortillas
Fish taco toppings (sliced avocado, diced tomatoes, jalapeños, extra lime wedges)
Instructions
Preheat your oven to 400°F (200°C) for baking the cod.
In a small bowl, mix together chili powder, cumin, garlic powder, salt, and pepper. Rub this seasoning blend onto both sides of the cod fillets generously.
Drizzle olive oil over the seasoned cod.
Place the seasoned cod on a baking sheet lined with parchment paper. Bake in the preheated oven for 12-15 minutes or until the fish flakes easily with a fork.
In a large bowl, combine shredded cabbage, corn, red bell pepper, and chopped cilantro. In a separate small bowl, whisk together lime juice, honey, salt, and pepper. Pour the dressing over the slaw mixture and toss to combine thoroughly.
In a mixing bowl, combine sour cream, mayonnaise, lime juice, and hot sauce. Stir until smooth, and season with salt to taste.
While the cod is baking, warm the corn tortillas in a dry skillet over medium heat until pliable, about 30 seconds on each side.
Once the cod is cooked, flake it into large pieces. Assemble by placing a few pieces of cod on each tortilla, topping with corn slaw, drizzling with creamy sauce, and adding any additional toppings you desire.
