A must-try dish showcasing the incredible marriage of minced lamb with spices, grilled to perfection and traditionally served on skewers.
Ingredients
Scale:
1 lb ground lamb (preferably with some fat for flavor)
1 medium onion, finely grated
3 cloves garlic, minced
1-2 tablespoons red pepper flakes
1 tablespoon cumin powder
1 teaspoon black pepper
1 teaspoon salt
1 tablespoon fresh parsley, chopped
Skewers (metal or soaked wooden skewers)
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon smoked paprika
1 bell pepper, cut into chunks
1 zucchini, sliced
Cherry tomatoes
Instructions
In a large bowl, combine the ground lamb, grated onion, minced garlic, red pepper flakes, cumin, black pepper, salt, and chopped parsley. Mix well by hand until all ingredients are evenly combined.
In a separate small bowl, whisk together the olive oil, lemon juice, and smoked paprika to create the marinade.
Pour the marinade over the meat mixture and blend it thoroughly. Cover the bowl and refrigerate for 1-2 hours to allow the flavors to meld; overnight marinating is ideal.
Preheat your grill to medium-high heat (approximately 400°F). If using wooden skewers, ensure they have been soaked in water for at least 30 minutes.
Form the meat mixture into long, flat sausages around the skewers, ensuring they are tightly packed.
Skewer the prepared vegetables alongside the kebabs or on separate skewers.
Place the skewers on the grill, cooking each side for about 5-7 minutes, or until the meat is browned and cooked through (internal temperature should reach 160°F).
Remove from the grill and let the kebabs rest for a few minutes before serving.
